Caramelized sweet potato, peppers and onion topped with sunny eggs.
Ingredients
2 sweet potatoes, peeled and diced
1 green bell pepper, diced
1 red onion, diced
4 large eggs
1 tsp smoked paprika
2 tbsp olive oil
Salt and pepper
Make it
Cook sweet potato in oil in a covered skillet over medium heat for 10 minutes, stirring once or twice.
Uncover, add pepper, onion and paprika, and cook 8 minutes more until browned.
Make four wells, add eggs, cover and cook until whites and yolks are set.
