Something for everyone. Spring Brook Park is located along the Bay Circuit Trail, and is accessible, with plenty of free parking in the adjacent municipal lot. Silky spiced sweet potato filling on a buttery graham crust, easy to slice.
Ingredients
2 cups mashed cooked sweet potato
1 1/2 cups graham cracker crumbs
5 tbsp melted butter
3/4 cup brown sugar
2 large eggs
3/4 cup evaporated milk
1 tsp cinnamon
1/2 tsp nutmeg
Make it
Heat oven to 350°F. Press crumbs and butter into a lined 8-inch pan and bake 8 minutes.
Whisk sweet potato, sugar, eggs, milk and spices until smooth; pour over the crust.
Bake 35 to 40 minutes until set in the center (175°F); cool and chill before slicing.
