The Farm at Trinity Health provides community-centered food programs designed to improve health equity while investing in the local food system. The Farm is a part of a larger Trinity Health Food is Medicine initiative to address nutrition insecurity while improving health equity in our communities.
Soft greens scattered with nasturtiums and pansies in a light lemon dressing.
Ingredients
6 cups mixed tender lettuces
1 cup pea shoots or microgreens
1 cup edible flowers (nasturtium, pansy, viola)
1 small cucumber, shaved
3 tbsp olive oil
1 tbsp lemon juice
1 tsp maple syrup
Salt
Make it
Gently rinse flowers and dry them on a towel.
Whisk oil, lemon juice, maple syrup and salt; toss with lettuces, shoots and cucumber.
Scatter flowers on top just before serving so they stay perky.
