The mission of the Rose City Farmers Market is to secure the future of food by supporting sustainable local farmers and food producers, expand reliable access to fresh, locally grown food while working to eliminate food insecurity in our community. Crispy baked sweet potato fries piled with black beans, salsa and lime crema.
Ingredients
3 sweet potatoes, cut into fries
2 tbsp cornstarch
3 tbsp olive oil
1 tsp smoked paprika
1 cup black beans, warmed
1/2 cup pico de gallo
1/3 cup vegan sour cream with lime
Make it
Heat oven to 425°F. Toss fries with cornstarch, then oil, paprika and salt.
Spread in a single layer and bake 25 to 30 minutes, flipping once, until crisp.
Top with beans, pico and lime crema.
