Zucchini Bread
A moist, lightly spiced loaf that makes good use of a big summer zucchini.
Ingredients
- 2 cups grated zucchini
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
Make it
- Heat oven to 350°F and grease a 9x5 loaf pan.
- Whisk sugar, oil and eggs, stir in zucchini, then fold in flour, soda, cinnamon and salt.
- Bake 50 to 55 minutes until a toothpick comes out clean; cool before slicing.
