A bright green, fresh-tasting soup that comes together in 20 minutes.
Ingredients
4 cups fresh or frozen peas
1 leek, white part sliced
2 tbsp butter
4 cups vegetable broth
1/3 cup mint leaves
1/4 cup plain yogurt
Pea shoots to garnish
Make it
Soften leek in butter 5 minutes.
Add peas and broth and simmer 5 minutes, then add mint and blend smooth.
Serve with a swirl of yogurt and a pile of pea shoots.
