Mini Greens Co is an indoor microgreens farm producing several varieties of microgreens for wholesale to local grocery stores, restaurants, farmers markets, and various other customers. We pride ourselves on practicing no harmful chemical usage in the growing process with includes no added synthetic fertilizers, fungicides, herbicides, or pesticides.
Crisp, cheesy tortillas filled with peppers, onions, corn and black beans.
Ingredients
4 large flour tortillas
2 cups shredded jack cheese
1 bell pepper, sliced
1/2 onion, sliced
1 cup black beans, rinsed
1/2 cup corn
1 tsp chili powder
Make it
Saute pepper, onion and corn with chili powder until soft, then stir in beans.
Fill half of each tortilla with cheese and veggies and fold.
Cook in a dry skillet 2 to 3 minutes per side until golden and melted.
