Recipe to try at home

Quick Pickled Cucumber Salad

Crisp, tangy cucumbers with sesame and a little heat, ready in 15 minutes.

Ingredients

  • 2 English cucumbers, thinly sliced
  • 1/4 cup rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tsp toasted sesame oil
  • 1 tsp red pepper flakes
  • 1 tbsp sesame seeds

Make it

  1. Toss cucumbers with salt and let sit 10 minutes, then squeeze out the liquid.
  2. Stir vinegar, sugar, sesame oil and pepper flakes until sugar dissolves.
  3. Toss with cucumbers and sprinkle with sesame seeds.
