Egg and Cheese Breakfast Sandwich
A toasted roll stacked with a folded egg, melty cheese and fresh tomato.
Ingredients
- 2 English muffins or soft rolls
- 2 large eggs
- 2 slices American or cheddar cheese
- 2 slices tomato
- 1 tbsp butter
- Salt and pepper
Make it
- Toast muffins and butter them lightly.
- Beat eggs with salt and pepper and cook in a buttered pan until fully set; fold into squares.
- Layer egg, cheese and tomato on the muffins and close them up while warm.
