Banh Mi Style Chicken Sandwich

Lemongrass-garlic chicken with quick pickled vegetables in a crusty roll.

Ingredients

  • 1 lb boneless chicken thighs
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 cup shredded carrot and daikon
  • 1/4 cup rice vinegar
  • 4 small baguettes
  • Cucumber, cilantro and mayo

Make it

  1. Marinate chicken in soy, sugar and garlic 15 minutes; toss vegetables with vinegar and a pinch of sugar and salt.
  2. Cook chicken in a hot oiled pan 5 to 6 minutes per side until 165°F, then slice.
  3. Fill mayo-spread baguettes with chicken, pickles, cucumber and cilantro.
