Chewy farro tossed with cucumber, tomato, herbs and a zippy lemon dressing.
Ingredients
1 cup farro
1 cucumber, diced
1 cup cherry tomatoes, halved
1/2 cup chopped parsley
1/4 cup chopped mint
1 lemon, zested and juiced
1/4 cup olive oil
1/2 cup crumbled feta
Make it
Simmer farro in salted water 25 to 30 minutes until tender; drain and cool.
Whisk lemon zest, juice, olive oil and salt.
Toss farro with vegetables, herbs, dressing and feta.
