Grilled chicken, pesto and crunchy greens rolled up for an easy lunch.
Ingredients
1 lb boneless chicken breast
4 large tortillas
1/3 cup pesto
2 cups chopped romaine
1 cup cherry tomatoes, halved
1/2 cup shredded mozzarella
1 tbsp olive oil
Make it
Season chicken and cook in oil over medium heat 6 to 7 minutes per side until 165°F; rest and slice.
Spread tortillas with pesto and add romaine, tomatoes, cheese and chicken.
Roll tightly, tuck the ends, and cut in half.
