Tomato Jam
Sweet, savory and a little spicy, great on burgers and cheese boards.
Ingredients
- 2 lb ripe tomatoes, chopped
- 3/4 cup sugar
- 1/4 cup apple cider vinegar
- 1 tsp grated ginger
- 1/2 tsp red pepper flakes
- 1 tsp salt
Make it
- Combine everything in a heavy pot and bring to a boil.
- Simmer on low, stirring often, 45 to 60 minutes until thick and jammy.
- Cool and keep refrigerated in a jar up to 2 weeks.
