Crispy breaded chicken cutlets baked under marinara and bubbling mozzarella.
Ingredients
2 large chicken breasts, halved into cutlets
1 cup panko
1/2 cup grated parmesan
2 large eggs, beaten
1/2 cup flour
1 1/2 cups marinara
1 1/2 cups shredded mozzarella
3 tbsp olive oil
Make it
Dredge cutlets in flour, egg, then panko mixed with parmesan.
Brown in oil 3 minutes per side and move to a baking dish.
Top with marinara and mozzarella and bake at 425°F 12 to 15 minutes until bubbly and chicken reaches 165°F.
