Lemony Farro Salad

Chewy farro tossed with cucumber, tomato, herbs and a zippy lemon dressing.

Ingredients

  • 1 cup farro
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped parsley
  • 1/4 cup chopped mint
  • 1 lemon, zested and juiced
  • 1/4 cup olive oil
  • 1/2 cup crumbled feta

Make it

  1. Simmer farro in salted water 25 to 30 minutes until tender; drain and cool.
  2. Whisk lemon zest, juice, olive oil and salt.
  3. Toss farro with vegetables, herbs, dressing and feta.
