Bone-in chops with a smoky coffee and brown sugar crust, seared then roasted.
Ingredients
4 bone-in pork chops, 1 inch thick
1 tbsp finely ground coffee
1 tbsp brown sugar
2 tsp smoked paprika
1 tsp garlic powder
1 tsp salt
1 tbsp vegetable oil
Make it
Heat oven to 400°F. Mix coffee, sugar, paprika, garlic powder and salt and rub over chops.
Sear in an oiled oven-safe skillet 3 minutes per side.
Roast 6 to 10 minutes until the thickest part reads 145°F, then rest 3 minutes before serving.
