Tender, lightly sweet muffins that use up spotty bananas.
Ingredients
3 ripe bananas, mashed
1 1/2 cups all-purpose flour
1 cup rolled oats
1/2 cup brown sugar
1/3 cup melted butter
1 large egg
1 tsp baking soda
1/2 tsp cinnamon
Make it
Heat oven to 350°F and line a 12-cup muffin tin.
Mix bananas, butter, egg and sugar; stir in flour, oats, soda, cinnamon and a pinch of salt until just combined.
Fill cups and bake 20 to 22 minutes until a toothpick comes out clean.
