Little meatballs, greens and tiny pasta in a comforting chicken broth.
Ingredients
1 lb ground beef or pork
1/3 cup breadcrumbs
1/4 cup grated parmesan
1 large egg
8 cups chicken broth
3/4 cup small pasta
4 cups chopped escarole or spinach
1 carrot, diced
Make it
Mix meat, breadcrumbs, parmesan, egg and salt; roll into 3/4-inch balls.
Bring broth and carrot to a simmer, drop in meatballs and pasta, and cook 10 minutes until meatballs reach 160°F.
Stir in greens until wilted and season to taste.
