Fox Urban Farms, LLC is a hydroponic container farming venture serving the City of Winchester, VA with hyper-local, fresh, delicious lettuces, leafy greens, micro-greens, herbs and edible flowers year-round. We work with local restaurants, retailers and directly with the neighborhood via our Community Supported Agriculture (CSA) subscription program. Fox Urban Farms exists to increase local fresh food options in an urban setting, and mitigate increasing food supply chain and quality issues.

Recipe to try at home

Garlic Herb Roasted Potatoes

Crispy-edged potatoes tossed with garlic, rosemary and parsley.

Ingredients

  • 2 lb baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp chopped rosemary
  • 2 tbsp chopped parsley
  • 1 tsp salt

Make it

  1. Heat oven to 425°F. Toss potatoes with oil, rosemary and salt.
  2. Roast cut side down 25 to 30 minutes until browned.
  3. Toss with garlic and parsley in the last 5 minutes.
