A tangy, gently spiced mango relish that loves curries and grilled meats.
Ingredients
2 ripe mangoes, diced
1/2 cup sugar
1/3 cup apple cider vinegar
1 tbsp grated ginger
1/2 tsp ground cumin
1/4 tsp red pepper flakes
1/4 cup raisins
Make it
Combine everything in a saucepan and bring to a simmer.
Cook 25 to 30 minutes, stirring, until thick and glossy.
Cool and refrigerate up to 2 weeks.
