Recipe to try at home
Elote Street Corn Salad
Charred corn with lime, chili, cotija and cilantro, all the flavor of street corn.
Ingredients
- 4 cups corn kernels
- 2 tbsp mayonnaise
- 2 tbsp sour cream
- 1/2 cup crumbled cotija
- 1 lime, juiced
- 1 tsp chili powder
- 1/4 cup chopped cilantro
- 1 tbsp oil
Make it
- Char corn in an oiled skillet over high heat 6 to 8 minutes, stirring rarely.
- Stir mayonnaise, sour cream, lime juice and chili powder in a bowl.
- Fold in warm corn, cotija and cilantro and serve.
