Chicken Pesto Wraps
Grilled chicken, pesto and crunchy greens rolled up for an easy lunch.
Ingredients
- 1 lb boneless chicken breast
- 4 large tortillas
- 1/3 cup pesto
- 2 cups chopped romaine
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded mozzarella
- 1 tbsp olive oil
Make it
- Season chicken and cook in oil over medium heat 6 to 7 minutes per side until 165°F; rest and slice.
- Spread tortillas with pesto and add romaine, tomatoes, cheese and chicken.
- Roll tightly, tuck the ends, and cut in half.
