Coffee Tiramisu Cups

An egg-free tiramisu in little cups: coffee-soaked cookies and sweet mascarpone cream.

Ingredients

16 crisp ladyfinger cookies
1 cup strong brewed coffee, cooled
8 oz mascarpone
1 cup heavy cream
1/3 cup powdered sugar
1 tsp vanilla extract
2 tbsp cocoa powder

Make it

Whip cream, mascarpone, powdered sugar and vanilla to soft peaks.
Break ladyfingers, dip quickly in coffee and layer in 4 cups with the cream, ending with cream.
Dust with cocoa and chill at least 2 hours.
