Herby Green Omelet
A soft, folded omelet packed with chopped fresh herbs and a little cheese.
Ingredients
- 3 large eggs
- 2 tbsp chopped chives
- 2 tbsp chopped parsley
- 1 tbsp chopped dill
- 2 tbsp shredded white cheddar
- 1 tbsp butter
- Pinch of salt and pepper
Make it
- Whisk eggs with salt, pepper and half the herbs until no streaks remain.
- Melt butter in a nonstick pan over medium-low heat, add eggs and stir gently until mostly set with no runny liquid.
- Scatter cheese and remaining herbs over one half, fold, and slide onto a warm plate.
