Caribbean Black Bean Stew
Hearty black beans and sweet potato in a coconut thyme broth.
Ingredients
- 2 cans (15 oz) black beans, rinsed
- 1 large sweet potato, cubed
- 1 can (13.5 oz) coconut milk
- 1 onion, diced
- 3 cloves garlic
- 1 tsp allspice
- 3 sprigs thyme
- 1 cup vegetable broth
Make it
- Saute onion and garlic in oil until soft, then add allspice.
- Add sweet potato, beans, coconut milk, broth and thyme; simmer 20 minutes.
- Season with salt and a squeeze of lime and serve with rice.
