Coconut Curry Shrimp
Island-style curry with shrimp, potatoes and peppers in coconut milk.
Ingredients
- 1 lb shrimp, peeled
- 1 can (13.5 oz) coconut milk
- 2 tbsp curry powder
- 1 onion, diced
- 1 bell pepper, diced
- 1 large potato, diced small
- 2 cloves garlic
- 2 sprigs thyme
Make it
- Toast curry powder in oil 1 minute, then add onion, garlic and pepper and cook 4 minutes.
- Add potato, coconut milk, thyme and 1/2 cup water; simmer 15 minutes until potato is tender.
- Stir in shrimp and simmer 3 to 4 minutes until pink and opaque.
