Crispy Shrimp Po Boys

Golden cornmeal shrimp in soft rolls with lettuce, tomato and tangy sauce.

Ingredients

  • 1 lb medium shrimp, peeled
  • 1/2 cup cornmeal
  • 1/2 cup flour
  • 1 tsp Cajun seasoning
  • 1/2 cup buttermilk
  • 4 sub rolls
  • Shredded lettuce and sliced tomato
  • 1/3 cup mayo with 1 tbsp hot sauce

Make it

  1. Dip shrimp in buttermilk, then in cornmeal, flour and seasoning.
  2. Pan-fry in 1/2 inch hot oil 1 to 2 minutes per side until golden and opaque inside.
  3. Fill toasted rolls with sauce, lettuce, tomato and shrimp.
