Classic Smash Burgers
Thin, crispy-edged patties with melty cheese on soft toasted buns.
Ingredients
- 1 1/2 lb ground beef (80/20)
- 4 soft burger buns
- 4 slices American cheese
- 1/2 onion, very thinly sliced
- Pickle slices
- 2 tbsp mayonnaise mixed with 1 tbsp ketchup
- Salt and pepper
Make it
- Divide beef into 8 loose balls. Heat a cast iron pan or griddle over high heat.
- Smash each ball flat with a sturdy spatula, season, and cook 2 to 3 minutes; flip, add cheese, and cook until 160°F inside.
- Stack two patties per toasted bun with sauce, onion and pickles.
