Coffee Tiramisu Cups

An egg-free tiramisu in little cups: coffee-soaked cookies and sweet mascarpone cream.

Ingredients

  • 16 crisp ladyfinger cookies
  • 1 cup strong brewed coffee, cooled
  • 8 oz mascarpone
  • 1 cup heavy cream
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp cocoa powder

Make it

  1. Whip cream, mascarpone, powdered sugar and vanilla to soft peaks.
  2. Break ladyfingers, dip quickly in coffee and layer in 4 cups with the cream, ending with cream.
  3. Dust with cocoa and chill at least 2 hours.
