Banh Mi Style Chicken Sandwich

Lemongrass-garlic chicken with quick pickled vegetables in a crusty roll.

Ingredients

1 lb boneless chicken thighs
2 tbsp soy sauce
1 tbsp brown sugar
2 cloves garlic, minced
1 cup shredded carrot and daikon
1/4 cup rice vinegar
4 small baguettes
Cucumber, cilantro and mayo

Make it

Marinate chicken in soy, sugar and garlic 15 minutes; toss vegetables with vinegar and a pinch of sugar and salt.
Cook chicken in a hot oiled pan 5 to 6 minutes per side until 165°F, then slice.
Fill mayo-spread baguettes with chicken, pickles, cucumber and cilantro.
