Stuffed Bell Peppers

Colorful peppers stuffed with seasoned beef, rice and tomato, topped with cheese.

Ingredients

  • 4 large bell peppers, tops cut and seeded
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 can (14 oz) diced tomatoes
  • 1 tsp Italian seasoning
  • 1 cup shredded mozzarella
  • Salt and pepper

Make it

  1. Heat oven to 375°F. Brown beef until it reaches 160°F, then stir in rice, tomatoes and seasoning.
  2. Fill peppers and set in a baking dish with 1/4 cup water; cover with foil.
  3. Bake 30 minutes, top with cheese, and bake 10 minutes uncovered.
