Herbed Couscous with Chickpeas

Fluffy couscous with chickpeas, lemon and a big handful of herbs.

Ingredients

  • 1 cup couscous
  • 1 1/4 cups boiling vegetable broth
  • 1 can (15 oz) chickpeas, rinsed
  • 1/3 cup chopped parsley
  • 2 tbsp chopped mint
  • 1 lemon, juiced
  • 3 tbsp olive oil

Make it

  1. Pour boiling broth over couscous, cover and let stand 5 minutes.
  2. Fluff with a fork and stir in chickpeas.
  3. Fold in herbs, lemon juice, olive oil and salt.
