Ingredients

  • 1 cup couscous
  • 1 1/4 cups boiling vegetable broth
  • 1 can (15 oz) chickpeas, rinsed
  • 1/3 cup chopped parsley
  • 2 tbsp chopped mint
  • 1 lemon, juiced
  • 3 tbsp olive oil
