Sprouted Lentil Crunch Bowl
Home-sprouted lentils with crisp vegetables and a tahini lemon dressing.
Ingredients
- 2 cups sprouted lentils (or 1 cup lentils sprouted 2 to 3 days)
- 1 cucumber, diced
- 1 carrot, shredded
- 1 cup cherry tomatoes, halved
- 3 tbsp tahini
- 2 tbsp lemon juice
- 2 tbsp water
Make it
- Steam sprouted lentils 3 to 4 minutes for a tender bite, then cool.
- Whisk tahini, lemon juice, water and salt until smooth.
- Toss lentils with vegetables and dressing.
