Mediterranean Sheet Pan Cod

Flaky cod roasted with cherry tomatoes, olives and capers.

Ingredients

  • 4 cod fillets (6 oz each)
  • 2 cups cherry tomatoes
  • 1/2 cup pitted olives
  • 2 tbsp capers
  • 1 red onion, cut in wedges
  • 3 tbsp olive oil
  • 1 tsp dried oregano

Make it

  1. Heat oven to 425°F. Toss tomatoes, olives, capers and onion with 2 tbsp oil and roast 10 minutes.
  2. Nestle in cod, brush with oil, season with oregano and salt.
  3. Roast 10 to 12 minutes until fish flakes and reaches 145°F.
