Creamy Mushroom Risotto

Slow-stirred, creamy rice with golden mushrooms and parmesan.

Ingredients

  • 1 1/2 cups arborio rice
  • 12 oz mushrooms, sliced
  • 1 small onion, finely diced
  • 6 cups warm vegetable broth
  • 3 tbsp butter
  • 3/4 cup grated parmesan
  • 1 tbsp chopped thyme

Make it

  1. Brown mushrooms in 1 tbsp butter and set aside. Soften onion in 1 tbsp butter, then stir in rice for 1 minute.
  2. Add broth a ladle at a time, stirring, until rice is creamy and tender, about 20 minutes.
  3. Stir in mushrooms, parmesan, thyme and remaining butter.
