Sweet Potato Hash with Eggs
Caramelized sweet potato, peppers and onion topped with sunny eggs.
Ingredients
- 2 sweet potatoes, peeled and diced
- 1 green bell pepper, diced
- 1 red onion, diced
- 4 large eggs
- 1 tsp smoked paprika
- 2 tbsp olive oil
- Salt and pepper
Make it
- Cook sweet potato in oil in a covered skillet over medium heat for 10 minutes, stirring once or twice.
- Uncover, add pepper, onion and paprika, and cook 8 minutes more until browned.
- Make four wells, add eggs, cover and cook until whites and yolks are set.
