Chicken Tinga Tostadas

Smoky shredded chicken in chipotle tomato sauce on crunchy tostadas.

Ingredients

  • 1 1/2 lb boneless chicken thighs
  • 1 can (14 oz) fire-roasted tomatoes
  • 2 chipotle peppers in adobo
  • 1 onion, sliced
  • 2 cloves garlic
  • 8 tostada shells
  • 1 cup refried beans
  • Shredded lettuce and crema

Make it

  1. Blend tomatoes, chipotles and garlic. Soften onion in a little oil, add sauce and chicken.
  2. Cover and simmer 20 minutes until chicken reaches 165°F; shred in the sauce.
  3. Spread tostadas with beans and top with chicken, lettuce and crema.
