Creamy Mushroom Risotto
Slow-stirred, creamy rice with golden mushrooms and parmesan.
Ingredients
- 1 1/2 cups arborio rice
- 12 oz mushrooms, sliced
- 1 small onion, finely diced
- 6 cups warm vegetable broth
- 3 tbsp butter
- 3/4 cup grated parmesan
- 1 tbsp chopped thyme
Make it
- Brown mushrooms in 1 tbsp butter and set aside. Soften onion in 1 tbsp butter, then stir in rice for 1 minute.
- Add broth a ladle at a time, stirring, until rice is creamy and tender, about 20 minutes.
- Stir in mushrooms, parmesan, thyme and remaining butter.
