A fresh, herb-forward salad of parsley, mint, bulgur and lemon.
Ingredients
- 1/2 cup fine bulgur
- 3 cups finely chopped parsley
- 1/2 cup chopped mint
- 2 tomatoes, finely diced
- 3 green onions, sliced
- 1/3 cup lemon juice
- 1/3 cup olive oil
- Salt
Make it
- Soak bulgur in 1 cup hot water for 15 minutes, then drain well.
- Combine with parsley, mint, tomatoes and green onions.
- Dress with lemon juice, olive oil and salt; rest 10 minutes before serving.
