Ingredients

  • 4 cups fresh or frozen peas
  • 1 leek, white part sliced
  • 2 tbsp butter
  • 4 cups vegetable broth
  • 1/3 cup mint leaves
  • 1/4 cup plain yogurt
  • Pea shoots to garnish

Make it

  1. Soften leek in butter 5 minutes.
  2. Add peas and broth and simmer 5 minutes, then add mint and blend smooth.
  3. Serve with a swirl of yogurt and a pile of pea shoots.
