Summer Squash Pasta Primavera

Pasta tossed with tender squash, tomatoes, garlic and basil.

Ingredients

  • 12 oz penne
  • 2 small zucchini, sliced
  • 2 small yellow squash, sliced
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, sliced
  • 1/4 cup olive oil
  • 1/2 cup grated parmesan
  • 1/2 cup torn basil

Make it

  1. Cook pasta, reserving 1/2 cup water.
  2. Saute squash in oil 5 minutes, then add garlic and tomatoes for 2 minutes.
  3. Toss with pasta, parmesan, basil and splashes of pasta water.
