Herb Roasted Whole Chicken
A golden Sunday-style roast chicken rubbed with herb butter and lemon.
Ingredients
- 1 whole chicken (4 lb)
- 4 tbsp butter, softened
- 2 tbsp chopped rosemary, thyme and sage
- 3 cloves garlic, minced
- 1 lemon, halved
- 2 tsp salt
- 1 tsp black pepper
Make it
- Heat oven to 425°F. Mix butter, herbs and garlic and rub under and over the skin.
- Season with salt and pepper, tuck lemon inside and roast 60 to 75 minutes until the thigh reaches 165°F.
- Rest 10 minutes before carving.
