Chicken Pesto Wraps

Grilled chicken, pesto and crunchy greens rolled up for an easy lunch.

Ingredients

  • 1 lb boneless chicken breast
  • 4 large tortillas
  • 1/3 cup pesto
  • 2 cups chopped romaine
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded mozzarella
  • 1 tbsp olive oil

Make it

  1. Season chicken and cook in oil over medium heat 6 to 7 minutes per side until 165°F; rest and slice.
  2. Spread tortillas with pesto and add romaine, tomatoes, cheese and chicken.
  3. Roll tightly, tuck the ends, and cut in half.
