Sheet Pan Veggie Frittata
One pan feeds a crowd with eggs, roasted vegetables and melty cheese.
Ingredients
- 12 large eggs
- 1 cup milk
- 2 cups chopped zucchini
- 1 cup cherry tomatoes, halved
- 1 cup baby spinach
- 1 cup shredded mozzarella
- 1 tsp salt
- 1 tbsp olive oil
Make it
- Heat oven to 375°F and oil a rimmed sheet pan.
- Spread zucchini, tomatoes and spinach on the pan; whisk eggs, milk and salt and pour over, then top with cheese.
- Bake 20 to 25 minutes until the center is firm and reads 160°F. Cool 5 minutes and cut into squares.
