Golden cornmeal shrimp in soft rolls with lettuce, tomato and tangy sauce.
Ingredients
- 1 lb medium shrimp, peeled
- 1/2 cup cornmeal
- 1/2 cup flour
- 1 tsp Cajun seasoning
- 1/2 cup buttermilk
- 4 sub rolls
- Shredded lettuce and sliced tomato
- 1/3 cup mayo with 1 tbsp hot sauce
Make it
- Dip shrimp in buttermilk, then in cornmeal, flour and seasoning.
- Pan-fry in 1/2 inch hot oil 1 to 2 minutes per side until golden and opaque inside.
- Fill toasted rolls with sauce, lettuce, tomato and shrimp.
