Love and Hugs

Ingredients

• 1 lb shrimp, peeled and deveined
• 1 cup quick or stone-ground grits
• 1 cup shredded cheddar
• 2 tbsp butter
• 1 red bell pepper, diced
• 3 cloves garlic, minced
• 1 tsp Cajun seasoning
• 2 green onions, sliced

Make it

1. Cook grits in 4 cups salted water until creamy, then stir in butter and cheese.
2. Saute pepper in a little oil 3 minutes, add shrimp, garlic and Cajun seasoning, and cook 3 to 4 minutes until pink and opaque.
3. Spoon shrimp over grits and top with green onions.
