Banh Mi Style Chicken Sandwich
Lemongrass-garlic chicken with quick pickled vegetables in a crusty roll.
Ingredients
- 1 lb boneless chicken thighs
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 2 cloves garlic, minced
- 1 cup shredded carrot and daikon
- 1/4 cup rice vinegar
- 4 small baguettes
- Cucumber, cilantro and mayo
Make it
- Marinate chicken in soy, sugar and garlic 15 minutes; toss vegetables with vinegar and a pinch of sugar and salt.
- Cook chicken in a hot oiled pan 5 to 6 minutes per side until 165°F, then slice.
- Fill mayo-spread baguettes with chicken, pickles, cucumber and cilantro.
