Lemony Farro Salad
Chewy farro tossed with cucumber, tomato, herbs and a zippy lemon dressing.
Ingredients
- 1 cup farro
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup chopped parsley
- 1/4 cup chopped mint
- 1 lemon, zested and juiced
- 1/4 cup olive oil
- 1/2 cup crumbled feta
Make it
- Simmer farro in salted water 25 to 30 minutes until tender; drain and cool.
- Whisk lemon zest, juice, olive oil and salt.
- Toss farro with vegetables, herbs, dressing and feta.
