Caprese Pesto Panini
Fresh mozzarella, ripe tomato and basil pesto pressed in crusty bread.
Ingredients
- 4 slices ciabatta or sourdough
- 3 tbsp pesto
- 6 oz fresh mozzarella, sliced
- 1 large tomato, sliced
- Handful of basil leaves
- 1 tbsp olive oil
Make it
- Spread pesto on the bread and layer mozzarella, tomato and basil.
- Brush outsides with oil.
- Press in a hot skillet under a heavy pan 3 minutes per side until golden and melty.
